When you just need dessert for breakfast

I hope it’s not wrong to quote scripture in reference to delicious food.  This is the verse I thought of today when I had this amazing bowl of goodness!  I am stuffed and happy now, and those are two things I like to be.  Haha

Yesterday I was looking for a quick chocolate oat breakfast recipe and wasn’t thrilled with my options but was very intrigued when I came across this recipe for Early Morning Peanut Butter Banana Oatmeal.  She has you start by cooking a banana in 1 tsp of coconut oil and I had to try that!

Chocolate Chia Oats

Cook banana in coconut oil for 5 minutes

I tried to tweak her recipe but failed pretty badly when I used a whole tsp of vanilla.  YICK!   So I thought I would give it another go today.  I tried to make it more calorie friendly and a bit closer to 21 Day Fix approved.  So here it is!  I turned out SOOOO GOOOOD!  I even took a spatula to the pot, which is probably a first for me.  Haha

Chocolate Chia Oatmeal

Chocolate Chia Oatmeal

Ingredients:

1 large ripe banana, peeled and roughly chopped

1 tsp coconut oil

1 tbsp shredded unsweetened coconut

1/2 tbsp natural peanut butter

1 tbsp PB2

1/4 cup old fashioned oats

1 tbsp chia seed

1/2 cup almond milk

1/8 tsp vanilla (optional)

sprinkle of sea salt

Toppings: shredded unsweetened coconut and sliced raw almonds

Directions:

1. In a medium-sized pot over medium heat, cook the banana, coconut oil, and shredded coconut for about 5 minutes, stirring frequently.

2. Stir in 1/2 tbsp peanut butter, 1 tbsp of PB2 and add the oats, chia, milk, and a pinch of salt. Whisk well until combined.

3. Keep on low heat for 2-3 minutes.  Remove from heat and stir in vanilla.

4. Scoop into a bowl and top with shredded coconut and sliced almonds.

I hope this brings you as much joy as it did me!  I love a new find when it comes to this type of combination.  Using banana to sweeten a meal is still so mind blowing to me.  For so many years I have used refined, bleached, and processed products.  I am disappointed in the food industry for what it has done to us as a country.  I watched the documentary “Fed Up on Netflix recently and it really opened my eyes to the problems all these diet and fat free products are creating.  People think they are being healthy when in fact they are putting toxins and poisons into their body.

 It’s honestly really, really heartbreaking.  I have been saying a lot lately that “you don’t know, what you don’t know.”  That may be a stupid statement but you can’t judge or blame people.  I didn’t really make changes until I knew reasons WHY to change.  I didn’t realize that trying to lose weight by NOT eating was bad.  Even in college I thought I could lose weight by eating a pack of cheese crackers and having a diet coke.  …and though I did lose weight, I was not healthy.  Eating real food in the correct portions by decreasing your carbohydrate (not just breads/grains!) intake as the day goes on and not eating 2 hours before bed seems to be what is recommended as far as I know.  Though many go vegan, paleo, etc…  I don’t want to say any certain way is right or wrong.  Just educate yourself and for heavens sake, don’t starve yourself!

As you can see from my recipes and posts, I do not starve myself.  🙂

Quick update:

I am over half way through a 21 Day Challenge and the accountability and encouragement seems to be really helping some.  I know it has helped me make many, many better decisions.

I am almost half way done Asylum and I cannot believe how I am so sore!  My quads are killing me.  It’s may be the most intense and fun program I have ever done.  Definitely my favorite of all I have tried!  The real challenge will be sticking to it during time at the beach!  EEK!  I will cross that bridge when I come to it.

And last but very much not least.  The twins!

Not much new when it comes to these guys.  We are almost fully recovered from our terrible bugs!  Blah.  Today is the first time Levi didn’t need a full outfit change after a poo in what seems like a week.   Thank the Lord!  Now if we can just stay well for the beach.  God grant it.

We tried to take our nap after lunch the other day.   …you can see how that went.  Usually they take a good 1-2 hour nap in the morning (10-12) and then stay up till bedtime.  I KNOW that’s not what is recommended but they just can’t stay up that long in the morning yet!  I don’t know what to do.  Just give them more time, I suppose.  Isaiah could possibly handle it but not Levi.  Anyway.  They are sweet and sleep like angels most nights so I can’t complain.  I pray we can be good godly parents that teach/show them to have a heart for God.  I’ll take your prayers for that!

Blogging about not blogging…

I HAVE MISSED BLOGGING!  All day I think about things I want to post here and it just hasn’t happened.  🙁
I can only blame myself …and Downton Abby …and my babies.

So an update is in order!
Since my last post I have completed Insanity: Max 30.  I lost 4 pounds and 4 inches and gained leaner legs!  Yay!

I was somewhat disappointed in those numbers but you get out what you put in and I could have eaten better.  I still had my regular Friday night cheat and then some BLTs (bites, licks, and tastes) through the week.  Still, progress is progress.  If I hadn’t done 2 clean eating challenges or drank my Shakeology it would have been worse!
Leave it to a bikini to put things in perspective for you.  Ouch!  I was pretty cranky the rest of the day, but it could have a lot to do with not sleeping enough.  God really got on me about that and I needed it.  Since I have gotten an extra hour of sleep it is not as hard to eat cleaner and be nicer.  I know this is elementary information, but I think sometimes we forget that our bodies know better than we do.

Now I am on day 4 of Insanity the Asylum and I am in love with the program!  I’ll go more into that later because it’s time to share a recipe before the kids wake up.

Sharing this recipe is so overdue.  My love for these little bites is on the verge of unhealthy.  I found them when I was breastfeeding twins and would literally eat a whole batch in a day or two.  No joke.  …and I wondered why I couldn’t lose weight.  Thank God for 21 Day Fix portion control containers.   Honestly.  Thank God!  Anyway.  Recipe.

No Bake Energy Bites

No Bake Energy Bites

INGREDIENTS:

1 cup (dry) oatmeal (I used old-fashioned oats)

2/3 cup toasted coconut flakes

1/2 cup peanut butter

1/2 cup ground flax seed

1/2 cup chocolate chips

1/3 cup honey(some light local honey makes this heavenly)

1 tablespoon chia seeds (optional but I like to double this up)

1 teaspoon vanilla extract

DIRECTIONS:

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.

Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
