I’m Getting There

There is always room for improvement.

After completing Insanity Max:30 and then doing a hybrid of Max:30 and PiYo, I decided I needed to step it back up to prepare for the crazy run I signed up for!  I’m terrified and pumped to take part in the local Mud Run that is “benefitting the ministry of Chestnut Mountain Ranch and helping young men and their families towards hope and restoration.”  I love that they make these events to benefit charities and organizations like this one.  Makes it much easier to fork over that sizable amount of cash.  🙂

Meanwhile I have been working on an Ab Challenge group.  I found pretty doable 30 Day Ab Challenge by Livestrong.com and we just wrapped it up yesterday!  I am both glad and sad.  It really helped strengthen my core!

We always see our faults though, don’t we.  I’m sure even a super model could tell you all her “trouble” areas.  Mine is my back, legs, and of course where I carried two precious babies not so long ago.  I know I will never be perfectly happy with how I look but I am stronger and that has helped me feel  so much better in my skin.  I am thankful that God has helped me find the discipline I needed to get here.

I recently read a blog post on Teambeachbody.com about Monday Meal Prep.  Thank God for chocolate Shakeology but I don’t see any chocolate or Oatmeal Energy Bites in this line up…

So I think I have some work to do.  I may greatly overdo my chocolate addiction.

While I was discouraged by the need to fix my chocolate fix issue.  I did work on some protein prep.  I got some preservative free turkey bacon burnt and also made some chicken breasts with my Bragg seasoning to have available.  I always eat a ton of spinach and throw some tomatoes on it but I am working on having some veggies at dinner.  I need to do Sunday Meal prep to cook up some veggies to have on hand.

While I was a little discouraged, I did turn it into new goals which I need.  If you don’t have direction or a focus you wont get anywhere.

So my new goals right now are to finish Insanity the Asylum (tomorrow will be day 14 or 30).  Decrease chocolate intake and focus on getting more of a variety of veggies into my dinner plans.  (Sorry hubs)

Mango Oatmeal

So I will leave you with this delicious recipe!  Well I tweaked it by only using just 1/2 cup of oats (no bran) and 1/2 cup almond milk.  I did use a whole scoop of protein powder and was so full!  My dad gave me a beautiful mango and it made for a very delicious breakfast!  Reading the recipe now I see I didn’t use any salt either.  Haha

Ingredients:
1/2 cup old-fashioned rolled oats (not instant)
1/2 cup oat bran
1/8 tsp sea salt
1 cup unsweetened almond milk
1/4 cup protein powder (optional)
1 ripe mango, peeled and pitted, diced
1 tsp roasted golden flaxseed
2 tbsp chopped cashews
1 tbsp unsweetened flaked coconut

Preparation:
Combine oats, oat bran and salt with 2 1/4 cups water in a small saucepan over medium high heat until simmering. Reduce heat to low and cook, stirring until mixture thickens and water is absorbed, about 3 minutes. Remove from heat and let sit two minutes.
Divide cereal equally between 2 bowls. Whisk together almond milk and protein powder, and pour over cereal. Top with mango, flaxseed, cashews and coconut.

Minding Your Own Business.

Some moments my heart is so full of thankfulness that I get to be home and take care of my twins while they are small.  I had always wanted to be a stay at home mom, I thought, until I worked my behind off to get a BSN and then worked on my nursing skills for almost 8 years.  Not every moment do I remember to be grateful.  Like all things in life, this also has it’s ups and downs.   Kind of like this morning when Levi whined for a full 45 minutes until I had breakfast ready.  🙂
But today when he woke up from his nap and played quietly (Isaiah was still sleeping) my heart was so full.

A post workout shake while I watch my baby play

I did NOT want to workout today but I reminded myself of the “Never miss a Monday” mentality.  I have been here before.  I don’t get enough sleep the night before and I am tired.  The best decision seems to be to just lay around.  WRONGO!  I’ve tried both routes and only one is the correct option!  Workout and get your butt in bed earlier!  Though life does happen and if you have complicated unforeseeable circumstances that repeatedly take time from your sleep, get some sleep.  Once things settle in your life you can get back to your exercise routine.  It’s not going anywhere.  Be at your best for your family.  Try and find some balance.

Speaking of balance, I am really trying super hard to get in some devotional time.  We are smothered by the worlds definition of success and it is not God’s.  What is God’s definition of success?  I couldn’t begin to touch on that one.  I have not been in the Word nearly as much as I should lately.  I’ve read plenty of devotionals but I think I miss out just a little on what God has to tell me straight from His Word sometimes.  Today I read in 1 Thessalonians chapters 4 & 5.  These two verses stood out to me most.

4:11 and to make it your ambition to lead a quiet life: You should mind your own business and work with your hands, just as we told you, 12 so that your daily life may win the respect of outsiders and so that you will not be dependent on anybody.

&

5: 11 Therefore encourage one another and build each other up, just as in fact you are doing.

This can be a tough one…

There is so much I could say about these chapters but the dishes need done and the kids need attention.  I think these speak for themselves.  The point is that I went into my devotional time with a restlessness and after some time on my knees and in the scriptures I felt a peace.  A peace I so desperately needed.  It is attainable if you just lay your heart, fears, hopes, and concerns at His feet.  Say Jesus I believe you died for my sin, ask forgiveness, and strive to do better each day.   So finally after I had found some peace I squeezed in a workout and shower.  Max Cardio Challenge from Insanity Max:30

  I was pretty excited to finally hit the end of my 30 minutes workout.  Don’t get me wrong, I love to workout!  But after some Jesus time, a great workout followed by a real “I actually got to shave today” shower, I was on Cloud 9 for awhile.   🙂    Hence the my heart is so full and thankful intro.

When you just need dessert for breakfast

I hope it’s not wrong to quote scripture in reference to delicious food.  This is the verse I thought of today when I had this amazing bowl of goodness!  I am stuffed and happy now, and those are two things I like to be.  Haha

Yesterday I was looking for a quick chocolate oat breakfast recipe and wasn’t thrilled with my options but was very intrigued when I came across this recipe for Early Morning Peanut Butter Banana Oatmeal.  She has you start by cooking a banana in 1 tsp of coconut oil and I had to try that!

Chocolate Chia Oats

Cook banana in coconut oil for 5 minutes

I tried to tweak her recipe but failed pretty badly when I used a whole tsp of vanilla.  YICK!   So I thought I would give it another go today.  I tried to make it more calorie friendly and a bit closer to 21 Day Fix approved.  So here it is!  I turned out SOOOO GOOOOD!  I even took a spatula to the pot, which is probably a first for me.  Haha

Chocolate Chia Oatmeal

Chocolate Chia Oatmeal

Ingredients:

1 large ripe banana, peeled and roughly chopped

1 tsp coconut oil

1 tbsp shredded unsweetened coconut

1/2 tbsp natural peanut butter

1 tbsp PB2

1/4 cup old fashioned oats

1 tbsp chia seed

1/2 cup almond milk

1/8 tsp vanilla (optional)

sprinkle of sea salt

Toppings: shredded unsweetened coconut and sliced raw almonds

Directions:

1. In a medium-sized pot over medium heat, cook the banana, coconut oil, and shredded coconut for about 5 minutes, stirring frequently.

2. Stir in 1/2 tbsp peanut butter, 1 tbsp of PB2 and add the oats, chia, milk, and a pinch of salt. Whisk well until combined.

3. Keep on low heat for 2-3 minutes.  Remove from heat and stir in vanilla.

4. Scoop into a bowl and top with shredded coconut and sliced almonds.

I hope this brings you as much joy as it did me!  I love a new find when it comes to this type of combination.  Using banana to sweeten a meal is still so mind blowing to me.  For so many years I have used refined, bleached, and processed products.  I am disappointed in the food industry for what it has done to us as a country.  I watched the documentary “Fed Up on Netflix recently and it really opened my eyes to the problems all these diet and fat free products are creating.  People think they are being healthy when in fact they are putting toxins and poisons into their body.

 It’s honestly really, really heartbreaking.  I have been saying a lot lately that “you don’t know, what you don’t know.”  That may be a stupid statement but you can’t judge or blame people.  I didn’t really make changes until I knew reasons WHY to change.  I didn’t realize that trying to lose weight by NOT eating was bad.  Even in college I thought I could lose weight by eating a pack of cheese crackers and having a diet coke.  …and though I did lose weight, I was not healthy.  Eating real food in the correct portions by decreasing your carbohydrate (not just breads/grains!) intake as the day goes on and not eating 2 hours before bed seems to be what is recommended as far as I know.  Though many go vegan, paleo, etc…  I don’t want to say any certain way is right or wrong.  Just educate yourself and for heavens sake, don’t starve yourself!

As you can see from my recipes and posts, I do not starve myself.  🙂

Quick update:

I am over half way through a 21 Day Challenge and the accountability and encouragement seems to be really helping some.  I know it has helped me make many, many better decisions.

I am almost half way done Asylum and I cannot believe how I am so sore!  My quads are killing me.  It’s may be the most intense and fun program I have ever done.  Definitely my favorite of all I have tried!  The real challenge will be sticking to it during time at the beach!  EEK!  I will cross that bridge when I come to it.

And last but very much not least.  The twins!

Not much new when it comes to these guys.  We are almost fully recovered from our terrible bugs!  Blah.  Today is the first time Levi didn’t need a full outfit change after a poo in what seems like a week.   Thank the Lord!  Now if we can just stay well for the beach.  God grant it.

We tried to take our nap after lunch the other day.   …you can see how that went.  Usually they take a good 1-2 hour nap in the morning (10-12) and then stay up till bedtime.  I KNOW that’s not what is recommended but they just can’t stay up that long in the morning yet!  I don’t know what to do.  Just give them more time, I suppose.  Isaiah could possibly handle it but not Levi.  Anyway.  They are sweet and sleep like angels most nights so I can’t complain.  I pray we can be good godly parents that teach/show them to have a heart for God.  I’ll take your prayers for that!

Blogging about not blogging…

I HAVE MISSED BLOGGING!  All day I think about things I want to post here and it just hasn’t happened.  🙁
I can only blame myself …and Downton Abby …and my babies.

So an update is in order!
Since my last post I have completed Insanity: Max 30.  I lost 4 pounds and 4 inches and gained leaner legs!  Yay!

I was somewhat disappointed in those numbers but you get out what you put in and I could have eaten better.  I still had my regular Friday night cheat and then some BLTs (bites, licks, and tastes) through the week.  Still, progress is progress.  If I hadn’t done 2 clean eating challenges or drank my Shakeology it would have been worse!
Leave it to a bikini to put things in perspective for you.  Ouch!  I was pretty cranky the rest of the day, but it could have a lot to do with not sleeping enough.  God really got on me about that and I needed it.  Since I have gotten an extra hour of sleep it is not as hard to eat cleaner and be nicer.  I know this is elementary information, but I think sometimes we forget that our bodies know better than we do.

Now I am on day 4 of Insanity the Asylum and I am in love with the program!  I’ll go more into that later because it’s time to share a recipe before the kids wake up.

Sharing this recipe is so overdue.  My love for these little bites is on the verge of unhealthy.  I found them when I was breastfeeding twins and would literally eat a whole batch in a day or two.  No joke.  …and I wondered why I couldn’t lose weight.  Thank God for 21 Day Fix portion control containers.   Honestly.  Thank God!  Anyway.  Recipe.

No Bake energy bites, oatmeal balls

No Bake Energy Bites

No Bake Energy Bites

INGREDIENTS:

1 cup (dry) oatmeal (I used old-fashioned oats)

2/3 cup toasted coconut flakes

1/2 cup peanut butter

1/2 cup ground flax seed

1/2 cup chocolate chips

1/3 cup honey(some light local honey makes this heavenly)

1 tablespoon chia seeds (optional but I like to double this up)

1 teaspoon vanilla extract

DIRECTIONS:

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.

Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

Learning how I should really be eating

Rainy cold mornings are boring for the boys

        Getting anything done is tough, but I am thankful I have been able to wake up at 5 these mornings.   Especially today because they were fussing by 6!  Having my workout and shower done takes such a huge amount of stress off of me for the day and gives me such a great start.  Less stress means less crankiness…

I love a strong start to my day

     So I have been trying to incorporate 21 Day Fix containers into my routine.  I have been BLOWN AWAY by how much I was overeating!  Soooo sad.  Haha.  Since I am in the <150 lb category, that means I can only have 2 teaspoons of oils & nut butters.  Ever since I started breastfeeding, I have been a peanut butter eating machine!  I couldn’t figure out why I wasn’t losing weight when I was eating so clean and healthy.  I was eating at least 4 TABLESPOONS a day of peanut butter and then I started to add in coconut oil (though I kept that to 1 teaspoon or so).  That doesn’t count that I was probably having a tablespoon of olive oil with a salad and adding honey, almond milk, and coconut oil to my coffee in the morning.  AAHHHHH!  I won’t go into my avocado intake.

Long story short, you can eat too much even if it’s healthy.

     21 Day Fix containers really helped me to see that and I am so thankful.  I had hit a plateau and just could not get past it until I starting using them.  I am slowly learning that I am no longer exclusively breastfeeding twins anymore!  Haha.  Breaking these habits have required me to focus on staying busy and drinking plenty of water.  I have heard over and over that if think you are hungry or what chocolate that you should go do basically anything else for 15 minutes.  I tried that the other day and it worked!  Have to tell my stomach the kitchen is closed!  🙂

Speaking of the kitchen, here is a recipe I came up with yesterday.  I was really wanting a blueberry muffin and some protein and banana so I combined some elements of other peoples recipes and swapped out brown sugar or maple syrup for half of a banana.

It was quick, easy, and clean!

Blueberry banana egg muffin

1 egg

1/2 banana

2 tbs chia seeds

1/2 tsp vanilla extract

1/4 cup quick oats

4 Tbs frozen of fresh blueberries

splash of almond milk (or any other milk)

Directions:  Whisk egg in mug then add mashed banana.  Add vanilla, chia seeds, milk, and oats.

Fold in blueberries.

I added a little bit of cinnamon before and after cooking.

Cook for 1:30 – 2 minutes.  Try not to overcook

My Beachbody Transformation

My fitness journey started in 2013 when I was struggling to get pregnant.  I had always struggled with my weight and had just found out I had PCOS.  Around that time I was on Facebook and a friend posted a picture of the ab definition she was getting from TurboFire so I thought I’d give it a try.  I somehow came across an amazing team of people that helped keep me motivated and I went on to do Insanity and Asylum and had amazing results… and then I found out I was pregnant.  WITH TWINS!  

I had an incredibly difficult pregnancy.  After 6 weeks on hospital bedrest, our twin boys were born 6 weeks early weighing 4 and 1/2 pounds each.  We took them home after only 10 days but they required all of my focus and time.  I was on the floor playing with them at 5 months postpartum and realized I could barely get off the floor.  I had gained 70 pounds with my pregnancy and at that point I realized I HAD to start working on me. 

After recovering from a blood clot I was finally cleared for exercise and did a round of T25.  I didn’t cut calories because I was exclusively breastfeeding so I lost very little weight.  I did however gain back some much needed muscle.  I felt some confidence to start Insanity and completed month one when the boys started teething and we all basically stopped sleeping.  Haha.  I decided to focus on my nutrition so with Shakeology and clean eating I slowly started to shed some weight.  By the time the kids were one I was able to wean and really clean up my eating habits and focus on getting back in shape.  As of today I have lost 60 pounds from my heaviest!  I am seeing some ab definition and I now fit back into almost all my pre-pregnancy jeans.  I started Insanity Max:30 and still have much to learn about nutrition and will continue to improve myself daily.  Feel free to share my story if it can encourage someone to believe that they can do the same!  The key is to be consistent, and you can reach your goals!  Thanks for taking time to read my story.  🙂
